We follow celebrated chef and culinary innovator Paco Roncero as he oversees the creation of the MOM Culinary Institute across two sites: one in the bustling centre of the city; the other other located on the picturesque outskirts of the city a few steps from the famous El Pardo Royal Palace. The holder of two Michelin Stars, Paco discusses his belief that great cooking comes as much from affection for the food and respect for the land as it does from knowledge and technique.
