Daisuke Shimoyama, head chef and owner of Hannah, prepares Chirashizushi ("scattered sushi") in intimate detail as he talks to filmmaker Kate V Lewis about his personal journey from rural Japan to the heart of London and how he has had to adapt to the effects of the Covid-19 pandemic.
Daisuke’s passion for cooking has spanned 25 years and earned him positions at Michelin-starred restaurants. Yet, despite this depth of experience, his ultimate love of food is grounded in something quite simple: being able to watch his customers enjoy his creations. With his restaurant closed to seated diners for the foreseeable future because of Covid-19, Daisuke must now seek new ways to connect with his customers. As he reveals details of his own past and shares his love for seasonal, natural ingredients, Daisuke demonstrates the power of food and its ability to bring people together.
