Daisuke started work cleaning in his uncle's restaurant when he was 13 years old. But he wasn't allowed to start his culinary apprenticeship until he'd observed the kitchen in action for a few years. Now he nurtures a team of chefs on London’s busy South Bank in the art of street food and how these simple tasty dishes bridge the gap between cultures and people.
